48-Hour Sourdough
Our dough cold-ferments for at least 48 hours. That slow process gives it a depth of flavour and a lightness that fast dough can't replicate — and it's one of the first things guests comment on.
Local Ingredients
We source toppings from local and regional suppliers wherever possible. That means better flavour, shorter supply chains, and a menu that reflects where we're working as much as where we're based.
Fully Mobile Oven
The wood-fired oven comes on the trailer, fires up to over 400°C, and needs only a safe outdoor space. No mains connection, no kitchen requirements — fully self-contained from setup to service.
